Ingredients
  1. 2T Olive Oil
  2. 2 Chicken Breasts (boneless/skinless), cut into bite-size chunks
  3. 1 Large Onion, diced
  4. 3 Garlic Cloves, minced
  5. 2 (4-ounce) Can Mild Green Chilies, with juice
  6. 2c Chicken Stock (low sodium)
  7. 1t Ground Cumin
  8. 2 (15.5-ounce) Cans White Beans, drained and rinsed
  9. 1 Lime Juice
  10. 1 Lime Zest
  11. Salt n pepper, to taste
  12. 1/2c Fresh Cilantro, chopped
  13. 1/2c Cheddar Cheese, shredded
Instructions
  1. Sauté chicken with olive oil. Add onions & garlic. After onions and garlic are cooked, add chilies and cumin. Add stock and beans. Bring to a simmer. Add lime and salt n pepper to taste. Garnish with cilantro and cheese. Enjoy!
