Ingredients
  1. 6 Ears of Corn, grilled, cut off the cob
  2. 1/2 Can of Green Chilies
  3. 1T Ground Cumin
  4. 1t Cayenne (optional)
  5. 1 Red Pepper, diced
  6. 3 Green Onions, finely chopped
  7. 2c Chicken or Vegetable Stock/Broth
  8. 1/4c Cheddar Cheese
  9. Salt n Pepper, to taste
Instructions
  1. Over medium heat, cook first seven ingredients, but with no color. Add stock and bring to a simmer. Cook for 10-15 min. Either with a hand blender or traditional blender, blend until smooth. However, I like to blend just half of the soup for some texture. Salt n pepper to taste. Finish with cheddar cheese. Enjoy!
