My Perfect Sunday Night Menu

In a perfect world, I would enjoy this menu most warm Sunday evenings with my family.  There’s usually a bon fire burning in the fire pit during most of our outdoor dinners, never-mind the season.  It’s truly a pleasure of mine not only to hear the crackling of the fire, but the smell too.  There’s nothing like sitting around the table during a lazy Sunday evening laughing, telling stories, and enjoying each other through this delightful meal.

Fresh Baked French Baguette with High Quality Sweet Butter.  The butter makes all the difference in the world.  So, splurge tonight for the good stuff….such as Pulugra or Presidents Butter.  Of course there are other great butters, but wanted to share a couple of my favorites.  Purchase the Baguette fresh from your local quality market that makes them fresh each morning.  Tear a piece of bread versus slicing it with a knife.  Spread with the butter…..there’s nothing better!

Simple Grilled Avocado Salad with Cherry Tomatoes, Yellow Sweet Pepper, Cilantro, and Grilled Lime 

  • 1 pt.   Ripe Cherry Tomatoes, cut in half
  • 1 ea.  Yellow Sweet Bell Pepper, small dice
  • 1 bu.   Fresh Cilantro, loosely chopped
  • 1 ea.   Fresh Lime Juice
  • 2 T.    Olive Oil
  • 2 ea.  Ripe Avocados
  •            Salt and Pepper, to taste

Combine first four  ingredients to a mixing bowl and season with salt n pepper.  Cut lime in half and grill along side of avocado.  It will take a little longer then the avocado.  Lastly, cut avocados in half and brush with olive oil and sprinkle with salt n pepper.  Grill just long enough for grill marks on the meat of the avocado.  Once plated, pour mixture over avocado while still in shell and serve.   Squeeze the grilled lime over everything.  Delish! 


Thinly Sliced Chicken Lightly Coated in Panko Crumbs with Thick Sliced Tomato, Fresh Basil, Spicy Arugula and Roasted Garlic Vinaigrette.  

  • 4ea.   1/2 Chicken Breast, boneless/skinless
  • 2c.      Panko Crumbs
  • 1c.      Flour
  • 2ea.    Eggs
  • 2ea.    Tomatoes
  • 1c.       Fresh Basil Leaves
  • 3c.       Arugula, cleaned
  • 2T.       Roasted Garlic
  • 2T.       Shallot, minced
  • 1ea.     Lime
  • 1T.       Honey
  • 1/2c.    Olive Oil
  •               Salt and Pepper, to taste

Thinly slice chicken breasts in three pieces per chicken breast.   Season chicken breast prior to breading them with normal breading procedure while adding some of the fresh basil to bread crumbs.  Mix all the rest of the ingredients except for Arugula in a bowl, season to taste.  Cut one tomato in thick slices and sauté quickly.   Sauté breaded chicken breast with olive oil until golden brown.  About 3-4 min. on each side.  To plate, place the cooked tomato and arugula on top of crusted chicken and pour mixture over it.  Done!   It is so simple and so good. 


Grilled Pineapple with Mascarpone, Honey & Pistachios

  •  1         Ripe Pineapple
  • 1T       Olive Oil
  • 3T       Honey
  • 4oz     Mascarpone 
  • 1/2c   Roasted Pistachios

Peel and core pineapple and cut in four pieces length wise.  Brush pineapple with olive oil and grill quickly just to get grill marks and the sugars of the .  To plate, drizzle honey and pistachios over pineapple.  It is so simple, but so good.  Enjoy!


Rombauer Carneros Chardonnay– (approx, $35) A very buttery chardonnay that comes from the Napa Valley.  A soft yellow color that will darken with age. Bright, vibrant tropical fruit aromas flow from the glass. Underlying grapefruit and lime add depth and character to the aroma. Seamless, textured layers of cantaloupe, pineapple and vanilla flood the palate. A mouthwatering finish entices another sip. This wine will develop flavors of fig and apricot, giving richness, as it ages in the bottle.
