Ingredients
  1. 2 Seedless Cucumber, chopped
  2. 2 Large Tomatoes, coarsely chopped
  3. 1bu Scallions, chopped
  4. 1c Pitted Olives (such as Kalamata or Gaeta), halved
  5. 7oz Feta, crumbled
  6. 1/4c Fresh Mint, coarsely chopped
  7. 6T Olive Oil
  8. I Lemon Juice
  9. 1 Lemon Zest
  10. Salt n Pepper, to taste (you will need very little salt with because of the olives and feta)
Instructions
  1. Combine all ingredients. Enjoy!
