Ingredients
  1. 3 Medium Fennel Bulbs
  2. 6 Medium Carrots, loosely chopped
  3. 1 Medium Onion, quartered
  4. 2 Garlic Cloves
  5. 4T Olive Oil
  6. 2 1/2c Chicken or Vegetable Stock
  7. 2 1/2c Water
Instructions
  1. In a soup pot, cook two of the three bulbs of fennel along with onions and garlic with two tablespoons of olive oil. Add carrots, stock, and water. Bring to a simmer and cook until carrots are tender. As it is simmering, sauté third bulb of fennel with remainder of olive oil until caramelized. Blend soup until smooth with blender. Add caramelized fennel to soup. Salt n Pepper to taste. Enjoy!
