Ingredients
  1. 1 Onion
  2. 2 Celery Ribs, chopped
  3. 1 Carrot, peeled and chopped
  4. 1/4t Nutmeg
  5. 2 Potato, peeled and chopped
  6. 1 Granny Smith Apple, peeled and chopped
  7. 1.5 lb Butternut Squash, peeled, seeded, chopped
  8. 2c Chicken or Vegetable Broth
  9. 2c Water
Instructions
  1. Saute four ingredients with some olive oil. Add in three ingredients and cover with liquid. Bring to a simmer and cook until tender, about 15-20 min. Puree soup in batches in blender. Cover with towel to let heat escape as you blend hot soup. Be careful. Place blended soup back in pot to do final seasoning. You could garnish with sour cream.
