Ingredients
  1. 2T Olive Oil
  2. 8 Eggs
  3. 1c Milk
  4. 1/2c Parmesan
  5. Salt n Pepper
  6. 8oz Whole Wheat Crusty Bread, cut 1" cubes
  7. 1 Red Bell Pepper, thinly sliced
  8. 1 Onion, thinly sliced
  9. 1/4c Fresh Basil, chopped
  10. 1/2c Goat Cheese, crumbled
Instructions
  1. Use a 9" x 9" pan and Brush with Oil. Heat oven to 400 degrees. In a bowl beat eggs, milk, cheese, and salt n pepper. Add bread to mixture and let sit. Sauté bell peppers, onion, and salt n pepper until just brown. Pour soaked bread in oiled pan along with peppers and fresh basil. Sprinkle with goat cheese. Cook for about 25 min. or until the center is firm. Let rest for 5 min until serving.
